過年不做曲奇,不妨試試這款腰果酥噢,簡單又快手的一款點心,酥酥的餅乾底裡頭滲出滿溢的腰果香氣,還有少許的奶香味,表面點綴一顆大腰果,彎彎的像孩子的笑眼,再烤得金黃光亮,在喜慶節日裡就更討人歡心了吧
食譜:(約可做30-35顆)
無鹽牛油100克
糖粉65克
雞蛋20克
鮮奶油10克
低筋麵粉180克
腰果碎30克
泡打粉2克
鹽少許
腰果約18粒(一分為二成35-40片)
1.無鹽牛油室溫軟化,加入糖粉拌勻,再攪打至顏色發白的狀態
2.室溫雞蛋打散,分次加入雞蛋液到步驟1的牛油中,再加入鮮奶油,使之完全混合
3.低筋麵粉、泡打粉和鹽篩入,用刮刀拌勻,再加入腰果碎混合
4.把麵團分成約10克/個的小球,搓圓後稍稍壓扁成棋子的形狀
5.表面先刷一點雞蛋液,再按上半片腰果仁,再刷一點蛋液在表面
6.全部完成後送入預熱好的焗爐,175攝氏度烤約15-18分鐘,表面變金黃即可
Chinese New Year Cashew Cookies
Recipe: (Makes approximately 30-35 cookies)
Unsalted butter 100 grams
powdered sugar 65 grams
egg 20 grams
whipping cream 10 grams
low-gluten flour 180 grams
crushed cashews 30 grams
baking powder 2 grams
a pinch of salt
approximately 18 cashew halves (divided into 35-40 pieces)
1. Soften unsalted butter at room temperature, add powdered sugar and mix well, then beat until the color turns pale.
2. Beat the egg and gradually add it to the butter mixture from step 1. Add fresh whipping cream and mix until well combined.
3. Sift in the low-gluten flour, baking powder, and salt. Mix with a spatula, then add the crushed cashews and mix well.
4. Divide the dough into small balls of approximately 10 grams each, then roll them into round shapes and slightly flatten them into a chess piece shape.
5. Brush a little egg wash on the surface, then place half a cashew on top. Brush a little more egg wash on the surface.
6. Place all the cookies in a preheated oven at 175 degrees Celsius and bake for approximately 15-18 minutes until the surface turns golden brown.
